Job Overview
The Sushi Assistant is responsible for the preparation and production of sushi products in accordance with the store’s production plan, recipe specifications, and food safety standards.
The role supports the Sushi Chef in ensuring product quality, sales growth, waste minimisation, and compliance with hygiene and cold chain requirements. The successful candidate must demonstrate strong fish preparation skills, food safety knowledge, and customer-focused service in a fast-paced retail environment.
Job Description
Production
-
Prepare and produce sushi according to approved recipes and production plans.

Follow weekly production plans to support sales growth and reduce waste.

Cut and fillet fish accurately and efficiently.

Demonstrate broad knowledge of fish and fish-related products.

Maintain a clean and organised work environment at all times.
Sales, Turnover & Gross Margin

Ensure readiness of promotional product lines in collaboration with the Sushi Chef.

Support initiatives to drive turnover and maintain gross margin through proper portioning and waste control.
Food Safety & Compliance
-
Adhere strictly to food safety procedures and hygiene standards.

Maintain cold chain management at all times.

Prevent cross-contamination in the department.

Participate in required food safety training and compliance processes.
Administration
-
Assist with monthly stocktakes.

Conduct daily waste scanning.

Understand and follow production cards, production plans, and relevant SOPs.
Systems & Product Knowledge

Demonstrate ingredient knowledge and understanding of recipe specifications.

Maintain good knowledge of various sushi recipes.
-
Participate in the Sushi Onboarding Programme.

Apply relevant systems knowledge to support production and reporting.

Minimum Requirements

Grade 12 (Matric).

Must reside close to the store.

Experience in cutting and filleting fish.

Proven ability to prepare fish-related products.

Ability to communicate effectively in English.

Good knowledge of sushi recipes and production processes.

Business-minded with strong customer orientation.
