Job Purpose
The Deli Manager is responsible for leading and optimizing all hot and cold deli operations within the store. The role focuses on driving sales growth, protecting profit margins, managing stock and waste, ensuring food safety compliance, enhancing customer experience, and developing a high-performing deli team.
Key Responsibilities
1. Commercial and Financial Performance
- Achieve sales, gross margin, and profitability targets.
- Implement pricing, promotional, and product mix strategies.
- Monitor daily sales performance, stock levels, shrinkage, and waste.
- Align production volumes with sales forecasts and promotional activities.
- Identify profit leakage and implement corrective actions.
- Control operating costs while maximizing profitability.
2. Production, Quality and Innovation
- Ensure compliance with recipes, portion controls, and production plans.
- Maintain consistent food quality, taste, and presentation standards.
- Introduce seasonal and value-added products to improve competitiveness.
- Ensure product freshness and availability at all times.
- Manage stock rotation and storage practices effectively.
3. Customer Experience and Merchandising
- Create an attractive and engaging deli department.
- Implement merchandising plans and promotional displays.
- Ensure excellent customer service and product knowledge among staff.
- Respond to customer feedback and improve offerings accordingly.
- Enhance customer loyalty through quality products and service.
4. Operational Excellence and Compliance
- Ensure compliance with food safety regulations and hygiene standards.
- Monitor food temperatures, handling procedures, and quality controls.
- Manage staff schedules according to operational requirements.
- Improve processes and efficiencies within the deli department.
- Prepare for and comply with internal and external audits.
5. Leadership and Team Development
- Supervise, coach, and develop deli employees.
- Train staff in production planning, customer service, and food handling.

6. Reporting and Administrative Control
- Analyse sales, stock, waste, and profitability reports.

Minimum Requirements
Educational Requirements
- Grade 12 (Matric) – Essential.
- Culinary Qualification Level 2 or
- Hospitality and Catering Services Qualification.
Experience Requirements
- 3–5 years’ experience in a retail fresh food environment.
