Job Description
The Sushi Assistant is responsible for preparing sushi products according to established recipes and production plans while maintaining high food safety and hygiene standards. The role supports sales growth by ensuring products are available, fresh, and prepared according to company standards.
The successful candidate will assist the Sushi Chef, manage stock-related duties, minimize waste, and ensure compliance with food safety regulations.
Key Responsibilities
Sushi Production
- Prepare sushi according to approved recipes and production plans.
- Ensure sushi products meet quality standards.
- Follow production schedules to support sales growth and minimize waste.
- Assist with preparation of promotional product lines.
Food Preparation
- Cut and fillet fish.
- Prepare fish and seafood products.
- Maintain consistency in product quality and presentation.
- Follow recipe specifications accurately.
Stock Control & Administration
- Assist with monthly stocktakes.
- Conduct daily waste scanning.
- Help monitor stock levels and ingredient usage.
Food Safety & Hygiene
- Follow all food safety procedures.
- Maintain hygiene standards at all times.
- Ensure cold-chain compliance.
- Prevent cross-contamination.
- Keep workstations clean and organized.
Self-Management
- Demonstrate accountability and ownership.
- Stay updated on relevant regulations and developments.

Minimum Requirements
Education
- Grade 12 (Matric)
Experience
- Experience cutting and filleting fish.
- Experience preparing fish-related products.
- Knowledge of different fish types.
- Experience preparing sushi products is advantageous.
Skills
- Ability to communicate effectively in English.
- Understanding of sushi recipes and ingredients.
- Knowledge of food safety and hygiene practices.
- Understanding of production plans and procedures.
