Purpose of the Role:
To manage all food service-related operations within a healthcare environment. This includes overseeing kitchen operations, controlling food and labour costs, ensuring compliance with health and safety regulations (HACCP), and delivering high standards in food service.
Key Responsibilities:
Manage the daily operations of the catering unit.
Implement and oversee food production processes.
Monitor and control food and labour costs.
Ensure full compliance with HACCP and other safety standards.
Plan and develop menus, including special dietary requirements.
Supervise and support the kitchen brigade and front-of-house teams.
Manage strategic and operational performance in line with healthcare service expectations.
Maintain excellent customer service standards.
Support budgeting efforts and manage cost savings.
Minimum Requirements:
Education:
Tertiary qualification in Food & Beverage Services or Culinary Arts (compulsory)
Experience:
At least 3 years in kitchen/catering management (compulsory)
Experience in high-volume food service operations
Budget management experience (compulsory)
Experience in the healthcare industry (compulsory)
Knowledge of special diets (compulsory)
Hospital catering experience (advantageous)
Skills & Competencies:
Sound knowledge of HACCP and Health & Safety practices
Excellent team leadership and kitchen management skills
Strong customer service and communication abilities
Budgeting and cost-saving expertise
Ability to manage functions and events
Strong administrative and computer literacy
Understanding of South African labour and catering regulations
