    The Catering Manager is responsible for overseeing all food service operations within a healthcare environment. This includes managing kitchen operations, controlling food and labour costs, ensuring compliance with HACCP standards, developing menus, and managing kitchen staff. The role requires strong knowledge of special diets, healthcare food service standards, and high-volume catering operations.

     Purpose of the Role

    To manage and assist with all aspects of daily kitchen operations, ensuring high-quality food service delivery, cost-effective operations, compliance with health and safety standards, and excellent customer service within a healthcare setting.

     Key Responsibilities

    Operations Management

    • Assist with managing daily kitchen operations and production processes.

    • Oversee implementation of the food production process according to set standards.

    • Monitor and manage food and labour costs.

    • Develop and plan menus, including special diets.

    • Manage kitchen brigade and staff schedules.

    • Assist with strategic and day-to-day operational management.

    • Ensure full compliance with HACCP and other relevant food safety standards.

    Financial Management

    • Work within budget guidelines to deliver results.

    • Monitor soft costs and implement cost-saving measures.

    Compliance & Safety

    • Maintain knowledge of South African and industry-specific laws.

    • Ensure strict adherence to HSE and healthcare food safety requirements.

    Customer Service & Quality

    • Ensure high standards of food quality and presentation.

    • Deliver exceptional customer service within the healthcare environment.

     Minimum Requirements

    • Relevant tertiary qualification in Food & Beverage Services or Culinary Arts (compulsory)

    • Minimum 3 years’ experience in progressive kitchen/catering management

    • Experience managing high-volume, complex foodservice operations (highly desirable)

    • Healthcare catering experience (compulsory)

    • Knowledge of HACCP, special diets, HSE, and healthcare-specific foodservice standards

     Knowledge, Skills & Competencies

    • Strong kitchen and staff management skills

    • Budgeting and cost-control capabilities

    • Customer service and communication skills

    • Exceptional functional and organisational skills

    • Computer literacy

    • Knowledge of catering environment ranging from fine dining to large-scale operations
